How to prepare the Moroccan Harira (soup)

Harira (soup) is a popular soup in Morocco and is usually offered during the month of Ramadan. It is an integrated dish in terms of nutritional value, it is full of healthy ingredients beneficial to the body. Their components vary by region. We will give it today in the original Moroccan way.

Ingredients:


  • 200 g meat cut small pieces and used as a bone to give the taste and pleasure
  • 200 g Homs the amount of a large cup (soaked in water for 8 hours to become moistened and peeled)
  • 100 g lentils half a cup
  • 100 g small fadoush (vermicelli)
  • 1 medium onion cut into small squares
  • Half a kilo of chopped tomatoes 3 pieces
  • Half a cup of carafe
  • 1/2 cup parsley and chopped coriander
  • Spoon ginger
  • Teaspoon of ghee
  • Black pepper and salt as desired
  • 2 liter of water
  • 2 tablespoons tomato center
  • 100 g accurate tarnish cup


How to prepare

  1. Heat the oil in a saucepan at medium temperature, then add the meat and onions, and stir until the meat takes a brown color.
  2. Add hummus, lentils, tomatoes, celery leaves, black pepper, salt, turmeric, ginger, and purify for a few minutes.
  3. Add 2 liters of water, cover the pot, and cook for about two hours at medium temperature.
  4. Add tomato paste and stir well.
  5. Mix the flour in a quarter-liter of water and beat until the mixture is smooth, then add it to the soup and stir until the mixture is firm.
  6. Add the vermicelli and stir well. Cook for about 10 minutes at medium temperature.
  7. Add coriander, parsley and fat and stir well. This makes the soup ready to serve.
